The Recipe Box: Apricot Bread

Sisters co-owner Joy Wynings loves apricots.  She recently experimented with a recipe for apricot bread from ifood.tv.com.  Hands down… this one’s a keeper.  (Her taste testers concur.)  The tiny golden fruit may be an unexpected ingredient in bread, but it packs big flavor.  Joy’s personal finishing touch is dusting of powdered sugar on top.  A little bit of breakfast heaven.

What You’ll Need

1 1/2 cups all-purpose flour
2/3 cup sugar
1/2 cup wheat germ
1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cup softened butter, cut into pieces
2 eggs
1/2 cup  sour cream
1 cup dried apricots, quartered

The How-To

–  Preheat oven to 350 °F (175 °C).
–  In a bowl, combine flour, sugar, wheat germ, baking soda, salt, cinnamon, and nutmeg. Blend in butter with a fork.
–  In a small bowl, mix eggs and sour cream and add to first mixture. Stir well. Add apricots and stir gently.
–  Lightly grease a loaf pan with butter and sprinkle with flour. Pour batter into pan and bake for 1 hour. Remove from oven and let stand to cool for 10 to 15 minutes before unmolding.
