One of our favorite recipes this Holiday Season is Chopped Apple Cake
CHOPPED APPLE CAKE
3 Eggs. 1 c. Chopped Pecans
2 c. Sugar 1 tsp. Vanilla
1 1/2 c. Veg. Oil. 1 tsp. Soda
3 c. all purpose Flour. 1 tsp. Salt
3 c. Apples (chopped)
Pre-heat oven to 325 degrees
Mix dry ingredients (Flour, soda, salt) and set aside.
Chop Apples and pecans
In a large mixing bowl, combine sugar, oil, eggs, vanilla and apples. Slowly mix in the dry ingredients. (A mixer is not necessary so why not save the mess?)
You can bake this cake 4 different ways. Sheet cake, layer cake, pound cake or cup cake.
Sheet cake- 9x13: (grease with crisco and dust with flour). Bake 45 min.
Layer cake- bake in 2 greased and floured 8" or 9" pans for 45 min.
Pound cake- bake in a greased and floured tube pan for 1 hour 15 min. (Let cool 30 min. Before removing from the pan).
You may want to double this recipe because this stuff is deLish!
1 1/2 c. Brown sugar
1 stick butter
1/3 c. Evaporated milk or half & half
Mix all ingredients in sauce pan and bring to a boil. As soon as it comes to a rolling boil, remove from heat.
If you have made the layered cake or cupcakes, ice cake when cake layers are cool.
Pound cake and sheet cakes, drizzle with icing when serving.
